TURKEY AND AVOCADO WRAP
Ingredients
- 1 large whole-grain tortilla or wrap
- 4-5 slices of turkey breast (or any deli meat of your choice)
- 1 avocado (or even a half will suffice for this recipe)
- Shredded lettuce
- Several slices of tomatoes
- Shredded or sliced cheese
- Mayonnaise or any other sandwich spread
Instructions
- Prep the tortilla (you can even toast it a bit on the stove to add crispiness)
- Spread thin layers of the avocado on top of the tortilla and add salt/pepper to taste
- Layer the turkey on top of the tortilla and avocado
- Add your thinly sliced veggies on top of the meat, and cheese on top of this
- Slowly and tightly roll up into a wrap to keep anything from falling out
QUINOA SALAD
Ingredients
- 1 cup quinoa
- 2 cups water/broth
- 1 cup cherry tomatoes
- 1 cup cucumber
- 1 red bell pepper
- 1/4 cup red onion
- 1/4 cup fresh parsley or cilantro
- 1/8 cup feta cheese
- Vinaigrette dressing of your choice
Instructions
- Rinse and cook the quinoa over the stove
- Dice each of the vegetables and add to a large mixing bowl along with the cooled and cooked quinoa
- Add the feta cheese crumble and vinaigrette dressing on top
- Chill and toss before serving
AVOCADO AND EGG SANDWICH
Ingredients
- One egg
- One avocado (even just a half will suffice)
- 2 pieces of any bread
- Seasonings
- Cheese (optional)
Instructions
- Cook the egg however you wish (best ways for this recipe: sunny-side-up or omelet style)
- Toast the bread and spread butter to it
- Cut open your avocado and spread the insides onto the bread and top with seasonings
- Finish cooking the egg and add a sprinkle of cheese on top
- Add the cooled egg to the avocado bread and slice in half
CHICKEN AND VEGGIE STIR FRY
Ingredients
- Cooked chicken strips (you can even use chicken tenders if you’re feeling lazy)
- Veggies to stir fry (bell peppers, broccoli, peas, carrots, etc)
- Soy sauce and/or teriyaki sauce
- Cooked brown rice
Instructions
- In a pan, stir fry the cooked chicken and add the vegetables slowly until they reach the desired amount of crispiness
- Mix with sauce while you are cooking the chicken and veggies
- Lastly, mix in the brown rice or simply serve the stir-fry mix on top of the rice
GREEK SALAD IN A JAR
Ingredients
- Cherry tomatoes
- Cucumber slices
- Red onion slices
- Olives (sliced)
- Feta cheese
- Greek dressing
- Romaine lettuce
Instructions
- Slice and cut all ingredients after washing and set aside
- Layer each of the ingredients in a mason jar, starting with the dressing on the bottom
- Layer all of the vegetables on top and then add some more dressing and lettuce for garnish at the top
- When you are ready to eat, take it out of the fridge and shake to mix it all together
