PINEAPPLE AND CUCUMBER SMOOTHIE
Ingredients
- 1 cup chopped pineapple
- 1 small cucumber, peeled/chopped
- 1 cup spinach leaves
- 1/2 cup of coconut water
- Juice of 1 lime or lemon
- Ice cubes (if you want it cold)
Instructions
- Peel and cut all of your fruits to prepare them for the smoothie
- Start off with the chunkier ingredients (like the chopped fruits) in the blender first
- Place the rest of the ingredients into your blender and blend until smooth
- If you want to serve it cold, add the ice cubes in first with the other chunky ingredients
- Pour into a cup and put aside to allow it to set. Add a straw or a mini umbrella to make it cute!
BERRY AND YOGURT PARFAIT
Ingredients
- 1 cup of Greek yogurt
- 1 cup of mixed berries (such as strawberries, blueberries, raspberries, etc)
- 1/4 cup of granola or nuts
- 1 tablespoon of honey or other syrups to drizzle
Instructions
- Find a small bowl or a mason jar for easy storage in the fridge
- In the bowl or jar, layer the yogurt, mixed berries, and granola/nuts in multiple layers
- Keep repeating these layers until all the ingredients are used up
- Drizzle with honey or any other syrups for additional sweetness
- Serve chilled or at room temperature, but be sure to store any extras in the fridge so the yogurt and fruit doesn’t go bad!
FRUIT SALAD
Ingredients
- 1 cup of strawberries, sliced
- 1 cup of blueberries
- 1 cup of raspberries
- 2 cups of watermelon, cubed
- Fresh mint leaves (optional)
- Juice of 1 lemon or lime
Instructions
- In a large bowl, combine the strawberries, blueberries, raspberries, and watermelon
- Squeeze lemon juice over the fruit and gently toss them to coat
- Sprinkle some sugar or honey on top to add extra sweetness
- Garnish with fresh mint leaves for flavor and design
PINEAPPLE SALSA
Ingredients
- 2 cups of diced pineapple
- ½ cup diced red or yellow bell peppers
- ¼ cup diced red onion
- 1 jalapeno pepper (seeded, minced)
- The juice of 1 lime
- Handful of fresh cilantro
- Salt and pepper to taste
Instructions
- In a bowl, combine pineapples, bell peppers, red onions, and jalapeno peppers
- Pour the lime juice over the mixture and toss it gently to combine
- Add chopped cilantro and season with salt and pepper to taste
- Allow the flavors to mix together for about 15-20 minutes before serving
- You can serve with grilled fish or chicken, or just as a dip for a snack with chips
