Ingredients
- 2 lb beef tenderloin
- 1 lb puff pastry sheets
- 1/2 lb mushrooms (finely chopped)
- 4 slices prosciutto
- 2 tbsp dijon mustard
- 1 egg (beaten)
Instructions
- Preheat the oven to 400°F.
- Season the beef with salt, pepper, and other seasonings of your choice.
- Saute the mushrooms until they are dry, then cool.
- Spread the prosciutto onto a plastic wrap, layer with mushrooms, and then place the beef onto that roll. Be sure to roll it tightly, then chill.
- Roll out the puff pastry, place the wrapped beef roll in the center, and seal the edges.
- Brush the pastry sheet with egg wash and bake for 40-45 minutes or until golden brown.
- Rest for 10 minutes before slicing.
SWEET POTATO CASSEROLE
Ingredients
- 4 cups mashed sweet potatoes
- 1/2 cup brown sugar
- 2 eggs (beaten)
- 1/4 cup butter (melted)
- 1/2 cup milk
- 1 tsp vanilla extract
- 1 cup chopped pecans
- 1/2 cup flour
- 1/2 cup brown sugar
- 1/4 cup butter
Instructions
- Preheat the oven to 350°F and mix together the potatoes, sugar, eggs, butter, milk, and the vanilla.
- Pour it into an oven-safe, greased casserole dish.
- Combine the pecans, flour, brown sugar, and butter in a bowl.
- Sprinkle the mixture over the casserole. Bake for 30-40 minutes or until the top of the casserole is golden brown.
STICKY TOFFEE PUDDING
Ingredients
- 1 cup chopped dates
- 1 tsp baking soda
- 3/4 cup boiling water
- 1/2 cup butter
- 1 cup brown sugar
- 2 eggs
- 1.5 cups flour
- 1 tsp baking powder
- 1/4 cup molasses
- 1/2 cup butter (toffee sauce)
- 1/2 cup heavy cream (toffee sauce)
- 1 cup brown sugar (toffee sauce)
Instructions
- Soak the dates in boiling water with baking soda for 10 minutes, then puree it.
- Cream the butter, sugar, and eggs together. Fold in flour, baking powder, and the pureed date mixture.
- Pour batter into a greased pan and bake at 350°F for around 35 minutes.
- For the toffee sauce, heat up butter, cream, and sugar until it gets thicker.
- Serve the pudding warm and drizzle with toffee sauce!
